How do you know when your ferment is ready?
As your food ferments, the numbers of bacteria increase as they eat the sugar in the food. Deciding when to end your ferment is a personal decision, and the only real way to know is to taste it. If the food still tastes sweet then it isn’t ready, but if it fizzes a little on your tongue and has a tart taste then you are good to go.

My fermented garlic has turned blue. Is this normal?
It will turn blue sometimes when you cut the garlic with a knife. It will be fine to eat it though.

Would you use fermented garlic the same way as raw?
Absolutely, my fave at the moment is adding it to guacamole.

Are those herbs floating at the top of the jar? And if so what are they? Also, what does fermented garlic even taste like? one last question … is it better for you than raw?
It’s oregano!! I love the fermented garlic. Definitely better for you raw as it releases potent allicin which is a really powerful healer and detoxer. The recipe is in my new e-book, Functional Fermented Nutrition. Give it a go!
